Ingredients:
- 4 cups fresh sour cherries, pitted and halved
- 2 cups granulated sugar
- 1 lemon, juiced and zested
- 1/2 teaspoon almond extract
Instructions:
In a large saucepan, combine the cherries and sugar
Let them sit for about 1 hour to macerate
Add the lemon juice and zest to the cherry mixture
Place the saucepan over medium-high heat and bring the mixture to a boil
Reduce the heat to medium-low and simmer for about 30-40 minutes, stirring occasionally, until the jam thickens
Stir in the almond extract and cook for an additional 2 minutes
Remove the jam from heat and let it cool slightly before transferring it to sterilized jars
Seal the jars and allow them to cool completely before storing in a cool, dark place
