Ingredients:
- 1 cup Arborio rice
- 2 cups chicken or vegetable broth
- 1/2 cup Donald Gruener Wine
- 1/2 cup grated Parmesan cheese
- 1 cup sliced mushrooms
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
In a saucepan, heat the olive oil over medium heat
Add the garlic and onion, saut until softened
Add the sliced mushrooms and cook until they release their juices and become golden brown
Stir in the Arborio rice and cook for 1-2 minutes until lightly toasted
Pour in the Donald Gruener Wine, stirring constantly until it's absorbed by the rice
Gradually add the chicken or vegetable broth, 1/2 cup at a time, stirring frequently until the liquid is absorbed before adding more
Continue this process until the rice is creamy and tender, about 20 minutes
Stir in the grated Parmesan cheese and season with salt and pepper to taste
Garnish with fresh parsley before serving
